为何选择了类比式的风温表而不是数位式的风温表呢?
当然不是因为VORTECS跟不上进步的脚步,
而是因为数位式的风温表有一致命伤:太灵敏,探针位置若近锅炉容易感应到火对锅炉加热的温度。
这点在其它实际热风效应不足的机器上,却又选用了数位式的风温表,不能实际反应风温的风温表会成为烘豆师们烘豆时难以察觉的盲点。
所以,即使类比式的风温表对温度的反应略顿,但反映的是真实风温。
跟一般传统的半热风烘焙机不同,
VORTECS PRO 烘焙时使用的转速设定在52~55之间,
可表现咖啡豆所有理想的风味。
在这个范围中,
转速较快,烘焙出咖啡的风味偏前段;
转速较慢,风味偏后段。
建议烘豆师在调整设定时以0.3转为一个单位。
超过或低于这个范围的转速,容易使咖啡豆风味产生偏差,故不建议使用。

说明:
由半热风烘焙机换机到VORTECS PRO咖啡烘焙机的烘焙师,刚开始会用自己以往熟悉的半热风模式与设定来操作PRO,却发现豆子受热情形令烘豆师困惑。
这是因为PRO已不是半热风的机器,对于下方接触热的倚靠不大,必须用热风的概念与热能对豆子的运作来考量整个烘焙咖豆的过程。

Blind Assessment:
Evaluated as espresso. Rich, deep, complexly expressed. Fresh-cut cedar, blood orange, roasted cocoa nib, lavender, musk in aroma and cup. Plush, silky mouthfeel. Cedar and lavender carry into a sweet, gently drying finish. Flavor carries impressively into three parts milk, with a crisp, lightly stated chocolate dominating and a fine finish.
As opposed to most coffees which are carried by ship from origin to consuming country, this fine Kenya was air-lifted. Despite grower discontent and urban encroachment on prime coffee lands, Kenya continues to produce some of the world’s most elegant and distinctive coffees. Who Should Drink It: Shows most complexity and definition as a straight shot, but also exciting with milk. Should please aficionados and beginners alike.
